Food Dehydration
Dehydration is a process that removes a significant amount of water from food. Depending on the food type, different techniques are used. This process is found in many food products today, such as juices, soups, seasonings, meat, fish, vegetables, and fruits.
This technique has been used since ancient times. Humans first dried food in the sun or shade, allowing heat or cold to remove moisture, preserving it for longer periods. This method prevents spoilage, as microorganisms that require water cannot develop.
Process
- Selection of ripe fruit.
- Washing to remove impurities.
- Peeling and cutting as necessary.
- Soaking in water with optional additives like citric acid or honey.
- Drying with hot air at 60°C for several hours until the moisture content is reduced to 10%-25%.
